Ingredients

  • 1 cup rice
  • 1 cup water
  • 1 lime
  • 74 grams smoked sausage, diced
  • 40 grams ham, diced
  • 304 grams black-eyed peas
  • 52 grams onion, diced
  • 38 grams portabella mushroom, diced
  • 21 grams banana pepper, diced, including the seeds
  • 1 clove garlic, minced
  • 1/2 t ground turmeric
  • 1/4 t ground flax seed
  • 1/4 t ground annatto

Directions

  1. soak peas overnight in water. drain and cook according to directions. cook 1 cup rice in 1 cup water with the lime juice squeezed in to rice and water. add rinds to cook with rice. cook about 20 minutes. sauté garlic, onion and pepper till onion start to get transparent. add meat and heat. remove lime peel and add rice to meat. blend well. add turmeric, flax and annatto. blend well. drain peas and add to mixture and blend. lay mushrooms on top cover simmer on low about 10 minutes. may add water if it gets to dry.
