Skewered-Grilled Chicken Satay

- one pound boneless/skinless chicken breasts
- 2 tablespoons creamy peanut butter
- 1 tablespoon low sodium soy sauce
- 2 tablespoons brown sugar
- 1/4 teaspoon ground ginger
- Metal skewers
Directions
- In a mixing bowl add peanut butter, soy, ginger, brown sugar and mix well to combine
- Cut chicken into strips and coat well with the sauce
- Skewer (I usually do that before basting with sauce) grill until internal temperature of chicken reaches 165 degrees F (about 8 minutes)
- Serve and enjoy!
