  • Simple Salmon with Rosemary

    Simple salmon with rosemary, lemon and onion

    Ingredients

    • 2 large bunches fresh rosemary
    • 1 large red onion, thinly sliced
    • 1 2-pound center-cut salmon fillet with skin (or several smaller cuts)
    • 1-2 lemons, thinly sliced
    • Olive oil

    Directions

    1. Preheat oven to 500°F.
    2. Arrange half of rosemary sprigs in single layer in center of a heavy baking sheet.
    3. Layer half of the sliced red onion atop rosemary.
    4. Sprinkle both sides of the salmon with salt and pepper to taste.
    5. Place salmon, skin side down, atop red onion.
    6. Cover salmon with remaining rosemary sprigs and red onion.
    7. Arrange lemon slices on top, squeezing a little lemon juice over the salmon.
    8. Drizzle with olive oil.
    9. Cover with foil and bake/roast until just cooked through (about 20 minutes.)
    10. Transfer salmon to plates.
    11. Serve with roasted onions and lemon slices.

      I made this for dinner a few nights ago. I used fresh rosemary from our garden. The rosemary was a little overpowering but the fish was very moist. I think next time I will cut back on the rosemary and see how it comes out. The onions were a delicious side.
