Shrimp & Tomato Pie

Ingredients

  • 9 x 12" pie shell
  • 3 Large eggs
  • 1/2 c. mayonnaise
  • 1 tomato, sliced
  • 1 brick sharp cheese
  • 1/2 pound cooked shrimp
  • Salt & pepper, to taste
  • Grated cheese, to taste
  • Progresso bread crumbs, to taste
  • Sm. onion, sauteed till soft
  • 1 stick butter, melted in pan
  • Parsley flakes, to taste

Directions

  1. Prick bottom of pie shell with fork. Mix the 3 Large eggs, mayonnaise, salt and pepper and put aside. Heat butter in frying pan. Saute/fry onion till soft.
  2. Cook 1/2 pound shrimp till pink. Cut in cubes and put aside.
  3. Pour in pie shell all ingredients including shrimp (break up cheese). Slice tomato all around top. Sprinkle with grated cheese and bread crumbs and parsley flakes on top. Bake in oven 30 min at 300 degrees till top is golden.
