Ingredients

  • 2 cloves garlic finely chopped
  • 3 tbsp butter
  • 3 tbsp safflower oil
  • 2 small tomatoes seeds and liquid removed then diced
  • 1/2 red pepper diced
  • Juice of one lemon
  • Mediterranean spiced sea salt

Directions

  1. Put the butter and oil into pan then add the shrimp. As shrimp is cooking add 1 tbsp Mediterranean spiced sea salt and the lemon juice.
  2. Make the rice as directed.
  3. Once the shrimp is done remove it from the pan, scrape out any bits or slimy chunks, add more oil and drop in the tomato and pepper and more spiced sea salt, add to the rice with butter and serve.
