Shrimp Pilau
Ingredients
- 3 lbs. deveined fresh shrimp
- 2 c. rice
- 2 lg. onions, minced
- 1 sm. bottle stuffed olives and juice
- 2 med. cans tomatoes
- 2 lg. bell peppers, minced
- 2 sm. datil peppers, cut up
Directions
- Saute/fry onion and bell pepper in bacon grease; add in cut up warm peppers, sliced olives and tomatoes. Bring to boil, add in uncooked rice and salt to taste. Cook VERY SLOWLY to prevent burning; lift rice several times with two-tined fork during cooking. Don't STIR! When rice is nearly done, add in shrimp on top of rice, as shrimp turns pink lift rice with fork, mix shrimp into pilau.
