Shrimp Jambalaya
Ingredients
- 1 slice bacon, cut into sm. pcs
- 1 sm. onion, diced
- 1 clove garlic, chopped
- 1 sm. green pepper, diced
- 1 1/2 c. tomato sauce
- 1 c. smoked ham, diced
- 1 pound raw shrimp, peeled & deveined
- 1 tbsp. Creole seasoning
- 4 c. water
- 1 c. rice
Directions
- Cook bacon in pan for 2 min. Add in onion, garlic and pepper. Saute/fry till transparent. Add in tomato sauce, ham and shrimp. Sprinkle with seasoning. Cook 5 min. Add in water and rice. Simmer till rice is tender, about 30 min. Extra cayenne pepper may be added. Serves 4 to 6.
- Serve with tossed salad and French bread, brushed with extra virgin olive oil, garlic pwdr, oregano and toasted.
