Everything in this shrimp cake recipe is keto friendly except for the panko bread crumbs. Follow one of the suggestions below to make it keto friendly. Eliminate the panko and add 1/2 cup coconut flour and 1 teaspoon Italian seasoning. Use pork rinds in place of the bread crumbs. You may need to stir in more than a 1:1 ration. I would start with 3/4 cup and add to it if needed to make the cakes easy to shape. My preference for this particular recipe is the coconut flour.
