  • Shrimp And Fish Rice Pilau

    Ingredients

    • 1/2 dl Vegetable oil
    • 50 gm Butter
    • 1 x Onion, peeled and finely minced
    • 2 x Cloves garlic, peeled and finely minced
    • 250 gm Prawns, peeled
    • 250 gm Red snapper, cut into chunks
    • 4 x Plum tomatoes, minced
    • 2 dl Coconut lowfat milk
    • 1 x Bay leaf
    • 2 dl Water or possibly chicken stock
    •     Red peppers
    •     Aubergine
    •     Ochre
    • 1 x 250 gram lon Basmati grnd rice
    • 1 pch Saffron
    • 40 gm Flaked almonds, toasted
    •     Spring onions
    •     Coriander for garnish

    Directions

    1. Heat the oil and butter. Add in onions and sweat till soft. Add in the garlic and sweat for a further minute.
    2. Add in the marinated fish and prawns, then the tomato, bay leaf, water, coconut lowfat milk, rice and saffron. Simmer and cover with lid on, on the side of the sauce for 20 min.
    3. Sprinkle with flaked almonds.
