Ingredients

  • 8 ounce yoked shrimp minced
  • 2 sm zucchini coarsely minced
  • 2 x plum tomatoes coarsely minced
  • 1/2 c. (4 ounces) crumbled feta cheese
  • 2 Tbsp. fresh lemon juice
  • 3 Tbsp. extra virgin olive oil
  • 1 tsp dry oregano
  • 1 c. minced fresh parsley
  • 1 x salt and freshly grnd pepper to taste
  • 6 x mini pitta breads

Directions

  1. In a medium bowl combine all ingredients except pitta bread.
  2. Taste and adjust seasoning.
  3. Make a slit in one side of each pitta bread and fill.
  4. Crumbled late cheese brings tang and texture to this colourful tumble of shrimp tomatoes and fresh minced zucchini.
