  • Shepherd's Pie With Beef

    Ingredients

    • 1 lb grnd beef
    • 1 1/2 c. beef broth
    • 1 tsp freshly grnd black pepper
    • 2 x bay leaves
    • 2 whl cloves
    • 1 dsh thyme
    • 1 c. carrots sliced
    • 1 c. onions sliced
    • 1 c. mushrooms sliced
    • 1 c. celery diced
    • 1 c. corn kernels
    • 1 1/2 Tbsp. flour
    • 1 lb potatoes cooked
    • 1 Tbsp. margarine (I do not think this is necessary!)
    • 1/2 c. skim lowfat milk
    • 1 Tbsp. chives minced
    • 4 ounce mozzarella cheese shredded low fat or possibly non-fat

    Directions

    1. In a skillet brown beef and drain excess oil. Add in 1 c. of broth, pepper, bay leaves, cloves and thyme. Cover and simmer for 30 min.
    2. Add in carrots, onions, mushrooms, celery and corn. Simmer till vegetables are tender.
    3. In a small bowl gradually add in remaining broth to flour, stirring constantly to create a smooth paste. Add in to beef and vegetables. Simmer 5 min or possibly till slightly thickened.
    4. Mash potatoes with margarine, skim lowfat milk and chives. Top meat mix with the mashed potatoes, sprinkle mozzarella cheese over all and bake at 375 degrees for 10 min.
