  • Shepherd's Pie

    Shepherd’s pie is a meat pie made with a crust of mashed potato. It is sometimes made with lamb, hence the name Shepherd’s pie. For this recipe, I used minced beef combined with green beans, sweet potato and green peas for the filling. Instead of making the mashed potato from scratch, I just picked up a box of ready mashed potato mix. But if you have the time and are feeling up to it, you can always make your own mashed potato.

    Ingredients

    • 1 lb minced beef
    • 1/2 cup sweet potato, sliced into small cubes
    • 1/2 cup green beans, sliced diagonally into 1-inch pieces
    • 1/2 cup green peas
    • 1 small onion, chopped
    • 2 tbsps Olive oil
    • A packet of Shepherd’s pie mix
    • 1/2 cup water
    • 1 sachet of mashed potato mix, prepared according to packet instructions

    Directions

    1. In a large wok, heat Olive oil over medium-high heat.
    2. Add onions and saute until tender.
    3. Add beef and cook until golden brown.
    4. Dissolve Shepherd’s pie mix in 1/2 cup water and pour over the beef. Bring to a quick boil. Reduce heat.
    5. Add in sweet potato, green beans and green peas. Let simmer until vegetables become tender.
    6. Remove from heat. In a oven-safe bowl, transfer beef mixture then top with mashed potato, covering the entire mixture. Flatten mashed potato with spatula.
    7. Pre-heat oven to 400 degrees.
    8. Place the pie in the oven and cook for 30 minutes. (If you want a browner crust, cook a little longer)
