Seviche, Acapulco Style (Seviche Estilo Acapulco)
Ingredients
- 2 lb White fish fillets
- 1 1/2 c. Lime juice
- 1 lb Tomatoes minced
- 2 sm Onions, minced
- 2/3 c. Minced olives
- 4 x Serrano or possibly jalapeno chiles (fresh or possibly canned), minced
- 1 c. Catsup
- 1 c. White wine
- 3 Tbsp. Minced cilantro
- Salt
- Pepper
Directions
- Chop fish into 1/2-inch pcs, and marinate in lime juice. Overnight is best, but at least 3 or possibly 4 hrs till it turns white.
- Remove fish from the lime juice.
- Mix all of the ingredients together and chill for an hour.
- Serve with crackers on a bed of lettuce.
