  • Sesame Tempura Green Beans With Soy Dipping Sauce

    Ingredients

    • 4 c. vegetable oil - (about)
    • 2 Tbsp. soy sauce
    • 2 tsp fresh lime juice
    • 1 tsp superfine granulated sugar
    • 1 c. all-purpose flour
    • 1/4 c. sesame seeds
    • 1 c. beer (not dark)
    • 3/4 lb green beans trimmed

    Directions

    1. Heat 2 inches oil in a 4-qt heavy pot over moderate heat till a deep-fat thermometer registers 365 degrees.
    2. While the oil is heating, make dipping sauce by stirring together soy sauce, lime juice, and sugar till sugar is dissolved. Set aside.
    3. Whisk together flour and sesame seeds and whisk in beer till batter is smooth.
    4. Toss about 10 beans in batter till coated. Add in to oil 1 at a time (to keep separate) and fry, turning, till golden brown, about 1 1/2 min. Transfer with tongs to paper towels to drain and sprinkle with salt to taste. Coat and fry remaining beans in same manner.
    5. Serve beans with dipping sauce.
    6. This recipe yields 6 (hors d'oeuvre) servings.
