  • Sephardic Zucchini Pie

    very simple main dish with farmers cheese.

    Ingredients

    • 2 matzos
    • water
    • 4 medium zucchini, about 2 lbs.
    • 3 eggs
    • 1 teas. salt
    • 1/2 lb. farmers cheese
    • 1 tblsp. oil plus some for baking dish
    • 1/2 teas. cinnamon (optional)
    • dash nutmeg(optional)

    Directions

    1. soak matzos in warm water until soft. Drain and squeeze dry.
    2. Peel and coursely grate zucchini into large bowl. In a separate bowl, lightly beat eggs with salt.(I would add cinnamon and dash nutmeg to this, although it is not in the recipe.) Add matzos, cheese and 1 Tblsp. of oil. Mix well. Combine egg mixture with grated zucchini; mix thoroughly. Pour the mixture into a greased 2 qt. baking dish. Bake 350 degrees in preheated oven uncovered for 1 1/2 hours or until golden brown.
