Seafood Stuffed Green Peppers

Ingredients

  • 6 med. size green peppers
  • 1/2 pound shrimp, peeled & deveined
  • 1 (6 ounce.) pkg. frzn crabmeat, thawed & liquid removed
  • 1 1/2 c. cooked rice
  • 1/2 c. celery
  • 1/2 c. onion
  • 2 tbsp. minced pimento
  • 3/4 c. mayonnaise
  • 1 teaspoon curry pwdr
  • 1/2 teaspoon salt
  • Pepper, bread crumbs, butter

Directions

  1. Cut top off each pepper; remove seeds and membrane. Cook in boiling water 5 min. Drain well and set aside.
  2. Combine shrimp, crab meat, rice, celery, onion and pimento. Combine mayonnaise, curry pwdr, salt and pepper. Stir into crab meat mix. Stuff peppers with seafood mix; sprinkle each with bread crumbs and dot with butter. Place in 1 1/2 qt baking dish. Add in warm water to depth of 1/2 inch. Bake at 350 degrees for 30 min.
