Scallops in a snap

- 1 lb Sea Scallops – rinse and pat really dry
- 2 TBS olive oil
- 4 strips of Morning Star Farms Soy Bacon (or use Turkey bacon if you eat meat) – sliced
- 1 small green onion – chopped, reserving the green part for garnish.
- Pepper and salt
Directions
- Heat 1 TBS of olive oil over medium high heat.
- When the oil is hot, add the soy bacon and white part of the chopped onion. Cook for 2 â3 minutes.
- Add the mushrooms and cook another 3 â 4 minutes.
- Remove to a plate and set aside.
- Salt and pepper your scallops.
- Add 1 TBS of oil to the hot pan and add your scallops.
- Cook 3 â4 minutes on one side, turn over and cook 3 â 4 more minutes.
- During the last minute of cooking, add the mushroom mixture back to your hot pan of scallops and stir around.
- Serve topped with the green part of the chopped onion.
