  • Scalloped Potato Casserole

    Ingredients

    • 4 to 6 med. potatoes
    • 1 sm. onion
    • 2 tbsp. butter
    • 1/4 c. lowfat milk
    • 2 tbsp. flour
    • 1/4 pound ham
    • Salt and pepper to taste
    • Large casserole dish

    Directions

    1. Chop onion, slice potatoes and cube ham (1/4 inch cubes). Butter casserole dish and place 1/3 of the potatoes in the bottom of the dish. Salt and pepper and spread a Tbsp. of flour over them. Scatter 1/2 the onions and ham and put dots of butter around the potatoes. Make a second layer the same as the first and then top it off with the last 1/3 of the potatoes and pour the lowfat milk over the top. Cover the dish and bake in a 425 degree oven for 45 to 50 min with it uncovered the last 15 min of baking. Will feed four.
    2. Variations: Leave out the ham and place four seasoned pork chops on the top after adding lowfat milk. Use skim lowfat milk, turkey ham and butter buds vice whole lowfat milk, pork ham and butter.
