  • Sauteed Green Beans With Bacon And Garlic

    Ingredients

    • 1 lb Fresh green beans
    • 1/2 x Cut diced uncooked bacon
    • 1/2 x Onion, chopped
    • 3 x Cloves garlic, minced
    • 1/4 c. Dry sherry
    • 1 pch Cumin
    • 1 tsp Freshly cracked black pepper
    • 1/2 tsp Salt

    Directions

    1. Snap off the stems of the beans and remove their strings, if any. Fill a large saucepan with water and bring it to a boil. Add in the green beans and cook for 3 to 4 min to blanch. Drain the beans again, then transfer to a medium bowl and set aside.
    2. In a medium saute/fry pan, cook the bacon over high heat till crispy. Remove the bacon with a slotted spoon, reserving the bacon drippings, and transfer the bacon to paper towels to drain. Decrease the heat to medium-high. Add in the onion and garlic to the pan and saute/fry till fragrant, about 2 min.
    3. Add in the sherry and cook till about 1 Tbsp. of liquid remains. Add in the beans, cumin, pepper, salt, and bacon and toss well.
    4. Place the beans on a serving platter and serve immediately.
