Sausage & Cheese Skillet
Ingredients
- 1 pound warm Italian sausage (bulk or possibly links cut into bite size pcs)
- 1 c. minced onion
- 1/3 c. minced green pepper
- 1 clove garlic, minced
- 1 (16 ounce.) can stewed tomatoes
- 1 c. tomato juice
- 1 (4 ounce.) can button mushrooms, liquid removed
- 2 teaspoon beef flavored instant bouillon or possibly 2 cubes
- 1/2 teaspoon Italian seasoning
- 1 c. grated Parmesan or possibly Romano cheese
Directions
- In large skillet, brown sausage; drain. Add in onion, green pepper and garlic; cook and stir till tender. Add in tomatoes, juice, mushrooms, bouillon and seasoning. Mix well and simmer, uncovered 30 min. Stir in 1/2 c. cheese; heat through and serve with remaining cheese and corn chips. Chill leftovers. May be used as a main dish.
