• Sausage-Bacon-Apricot Kabobs

    • 1 pkg grilling sausages (approx. 5 links)
    • 1 cup dried apricots
    • 8 slices bacon
    • 3 tbsp apricot preserves
    • 3 tbsp lemon juice
    • 1 tbsp Dijon mustard
    • 1 tsp Worcestershire sauce


    1. Place 8 wooden skewers in cool water to soak until needed (at least 15 minutes) Precook sausage 10 minutes in gently boiling water. Drain and cut into ¼ inch slices. Alternate sausage and apricots on 8 wooden skewers, weaving bacon back and forth in ribbon like fashion between them. Grill or broil over medium-high heat 3 to 4 minutes on each side. Combine preserves, lemon juice, mustard and Worcestershire in a small bowl. Brush preserves mixture on kabobs; continuing grilling, turning and basting frequently, until bacon is cooked through.
