Ingredients

  • 8 ounce penne rigate
  • 16 ounce spicy pork sausage
  • 1 can cream of mushroom soup
  • 8 ounce lowfat sour cream
  • 1/2 c. blue cheese
  • 4 ounce mushrooms sliced
  • 2 Tbsp. red and green bell pepper
  • 1/2 c. soft bread crumbs
  • 1 Tbsp. butter melted

Directions

  1. Cook pasta according to package directions. Drain.
  2. Brown sausage with bell pepper & mushrooms in a pan; drain. Combine soup, lowfat sour cream & blue cheese in a saucepan; cook til cheese melts.
  3. Add in pasta, sausage, mushrooms & pepper, tossing. Put in a 7"x11" baking dish. Combine breadcrumbs & butter; sprinkle over casserole.E
  4. Bake at 350F for 1/2 hr.
