Saturday Night Omelet

- 7 eggs plus a splash of milk – beaten
- 1 bell pepper – sliced
- ½ onion – sliced
- 2 cloves of garlic – chopped
- 1 tablespoon of pimento olives – chopped
- 1 tablespoon o f sun dried tomatoes – chopped
- 1 quart of button mushrooms – sliced
- ½ cup Monterey Jack cheese – grated
- ¼ cup parmesan cheese – grated
- Dash of salt
- Dash of black pepper
- Dash of chili powder
- Dash of garlic powder
- Drizzle of olive oil
Directions
- Heat a large frying pan with a drizzle of olive oil. Add the veggies and sauté until the onion is transparent and a nice color is on the veggies.
- Crack the eggs in a bowl with a splash of milk, the seasonings and the parmesan cheese and beat.
- Pour into the pan with the sautéed veggies and scatter the grated Monterey cheese on top.
- Lightly cover the omelet until set.
