Satay sauce for fish

An asian sauce to serve with fish, duck or chicken

Ingredients

  • 2 tbsp peanut oil
  • 1 large onion, chopped
  • 1 clove of garlick, crushed and chopped finely
  • 2 tsp fine corriander
  • 1 tsp fine Fennel
  • 1 tsp fine Cumin
  • 1/2 tsp fine dried chilli
  • 2 tbsp roasted and roughly chopped peanuts
  • 3/4 cup coconut milk
  • 4 tbsp white wine vinegar
  • 1 tsp brown sugar
  • Juice and grated peel of 1/2 lemon
  • Salt according to taste

Directions

  1. Gently saute onion in the peanut oil until aromatic
  2. Add garlic stirfry for 1 minute
  3. Add the rest of the ingredients and gently simmer, while stirring once in a while for about 10 minutes
  4. The sauce becomes more flavoursome after a few days in the refridgerater
