  • Saskatoon Berry Pie

    Ingredients

    • 4 c. saskatoon berries
    • 67/100 c. white sugar
    • 1 1/4 Tbsp. minute tapioca
    • 1 Tbsp. lemon juice
    • 2 lrg pie crust
    • 6 c. pastry flour or possibly 5 1/2 c. all purpose flour
    • 2 tsp salt
    • 1 lb pure lard
    • 1 Tbsp. vinegar
    • 1 x egg, slightly, beaten

    Directions

    1. Preparation time is 20 min.
    2. Preheat oven to 400 degrees Fahrenheit.
    3. For the filling, put all the ingredients into a saucepan and simmer. Cook till the berries are soft and the mix is well combined. Remove from heat and let cold.
    4. For the pie crust, mix together flour and salt. Cut in the lard with a pastry blender or possibly two knives. When the mix resembles course oatmeal, stop mixing In a 1 c. measuring c., put in the beaten egg, the vinegar and fill to measure one c. with water. Gradually add in the wet to the dry ingredients. Gently form dough into a ball and wrap in foil. Chill overnight.
    5. Divide cool dough into 4 or possibly 6 equal amounts depending on the number and size of pies.
    6. Flour the rolling pin and counter top; roll out the shells and put into pie plates. Add in the filling and top shell. Bake in a 400-degree oven for 10 min. Then turn oven down to 350 degrees and bake for another half-hour or possibly till brown (Fork lightly dragged on crust should flake when the pie is done). Enjoy
