Sarah's Rice Pudding
Adapted from the original Good Housekeeping cookbook Ingredients
- 1/2 cup uncooked brown rice
- 3 eggs
- 1/3 cup sugar
- 2 t. vanilla
- 1/2 cup raisins
- 1 1/2 t grated lemon rind
- 3 1/2 cups milk
- 1 t. cinnamon
- 2 T butter
Directions
- Preheat oven to 300 degrees.
- Cook rice according to package instructions.
- Into a 2 quart casserole, break eggs.
- Beat eggs and stir in sugar, vanilla, raisins, and lemon zest.
- Stir in milk and rice.
- Sprinkle with cinnamon and dot with butter.
- Set casserole in a baking pan filled with water to one inch below casserole.
- Bake uncovered for 1 hour and 25 minutes.
- After an hour, stir, trying not to break the top.
- Can be served warm or cold.
