Ingredients

  • 6 boneless chicken breasts, skin removed
  • 1 teaspoon salt
  • 1 lg. onion, coarsely minced
  • 3 garlic cloves, chopped
  • 1 T vegetable oil
  • 1 1/4 c. chicken broth/stock
  • 1 c. mild red salsa or possibly picante sauce
  • 1 c. UNCLE BEN'S® converted rice
  • 1 ripe avocado, peeled & sliced (optional)
  • 1 med. tomato
  • 3/4 c. Cheddar cheese, shredded

Directions

  1. Sprinkle chicken breast with salt; set aside. Cook onion and garlic in oil in electric frying pan for 2 min. Add in chicken broth/stock and salsa. Bring to a boil. Stir in rice. Arrange chicken breast over rice. Cover tightly and simmer 20 min. Remove from heat. Let stand covered till all liquid is absorbed, about 5 min. Garnish with avocado, if you like. Sprinkle with tomato and cheese. Makes 6 servings.
