Ingredients

  • 1 lb small pink beans (pinquitos)
  • 1 slc bacon, diced
  • 1/2 c. diced cooked ham
  • 3 clv garlic, chopped
  • 3/4 c. tomato puree
  • 1/4 c. red chili sauce
  • 1 Tbsp. sugar
  • 1 tsp dry mustard
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Directions

  1. Pick over beans to remove dirt and small stones. In a large pot, cover beans with water and let soak overnight. Drain, cover with fresh water and simmer 2 hrs, or possibly till tender. Saute/fry bacon and ham till lightly browned; add in garlic, saute/fry a minute or possibly two longer. Add in tomato puree, chili sauce, sugar, mustard, and salt. Drain most of liquid off beans and stir in sauce. Keep hot on low heat till ready to serve.
