Salted Egg Yolk Fish

- For the fish
- 2 pieces kerisi merah/red snapper - de-gut and cut into two.
- 2 tsp corn flour
- 1 tsp turmeric powder
- Salt to taste
- Other ingredients
- 2 salted eggs - boiled, remove the yolks and gently crumbled (you
- can also use the whites)
- 1 red onion - chopped
- 1/2 inch ginger - chopped
- 2 red chilies or 2 bird eye chilies - cut into pieces
- 2 sprigs coriander leaves - shredded/chopped
- 2 tbsp oyster sauce
- 1 tsp light soy sauce
- Oil as needed
- Pepper to taste
- Salt to taste (use sparingly or taste before adding)
Directions
- Rub flour, turmeric and salt over fish.
- Deep fry; remove and keep aside.
- Leave about 2 tbsp oil in the same pan.
- Saute onion, ginger and chilies.
- Pour in oyster and soy sauce and 1/4 cup of water.
- (More water for more gravy)
- Season with salt and pepper.
- When sauce thickens, add fish.
- Gently stir to coat fish with sauce.
- Off the heat.
- Add coriander leaves, spring onions and egg yolks.
- Stir again and dish out.
