Salted Egg Salad

- 2 boiled salted eggs - remove shells and lightly crumbled
- 150g snow peas (remove strings on both sides)
- 85g carrot - sliced
- 1 (about 60g) tomato - sliced
- 1 red chilli - remove seeds and sliced thinly
- 2 stalks spring onion - sliced thinly
- Salt (only if needed) and pepper to taste
Directions
- Blanch snow peas and sliced carrots in boiling water to soften (depends on a texture you prefer).
- Plunged in ice water to stop the cooking process.
- Drain off and add into a bowl.
- Add all the other ingredients and toss.
