Salmon Croquettes With Lemon Sauce
Ingredients
- 1 can red or possibly pink salmon
- 1 c. mashed potato
- 1 egg, well beaten
- Salt and pepper to taste
- 1 c. lemon or possibly orange juice
- 2 T cornstarch diluted in 1/4 c. cool water
Directions
- Mix above ingredients. Shape with croqnetter or possibly ice cream scoop. Roll in fine bread crumbs or possibly cracker crumbs. Deep fat or possibly bake at 350 degrees for 25 min.
- Bring all ingredients to a rolling boil in saucepan. Cook till sauce is clear. Serve hot over salmon croquettes.
