  • Salmon Burgers With Dill Tartar Sauce

    Ingredients

    • 10 ounce skinless salmon fillet cut into 1" pcs
    • 3 Tbsp. purchased tartar sauce plus
    • 1/2 c. purchased tartar sauce
    • 2 Tbsp. minced fresh dill
    • 1/4 tsp salt
    • 1/4 tsp freshly-grnd black pepper
    • 1 tsp grated lemon peel
    • 2 x sesame-seed rolls split
    •     Red onion slices
    • 4 x Bibb lettuce leaves

    Directions

    1. Place salmon fillets, 3 Tbsp. tartar sauce, 1 Tbsp. dill, salt, and pepper in processor. Blend using on/off turns till coarsely grnd. Form into two 1/2-inch-thick patties. (Can be made 6 hrs ahead. Cover and chill.)
    2. Prepare barbecue (medium-high heat). Whisk 1/2 c. tartar sauce, 1 Tbsp. dill, and lemon peel in medium bowl to blend. Grill rolls till toasted. Transfer to 2 plates and spread bottom halves generously with sauce.
    3. Grill patties till fish is cooked through, about 2 min per side. Place burgers atop sauce on rolls. Top each with onion slices, 2 lettuce leaves, and top half of roll. Serve, passing remaining sauce separately.
    4. This recipe yields 2 servings;
    5. can be doubled.
    6. Comments: These burgers are easier to handle if they are chilled for one hour before grilling. They would be great with rice salad and cucumber slices. Grilled lb. cake topped with crushed sweetened strawberries and whipped cream.
    7. This recipe yields a luscious finale.
