  • Russian Snow Twigs

    These are lovely at a xmas party. The demand for these never ends once you start courtesy of Diana Henry from Roast Figs Sugar Snow

    Ingredients

    • 2 large eggs and 1 egg yolk
    • 1 tbsp heavy cream
    • 4 tbsp superfine sugar
    • 1/4 tsp salt
    • 2 tbsp vodka or brandy
    • 3 cups all purpose flour, sifted
    • 1/2 tsp baking powder
    • sunflower or veg oil for deep frying
    • confectioners sugar for dusting

    Directions

    1. Beat together the eggs, egg yolk, cream and sugar and add the salt and vodka or brandy.
    2. Gradually sprinkle on the flour and baking powder. Mix to a dough and knead lightly Roll out into a rectangle about 1/8th inch (3mm) thick. Cut into strips about the width of 1 1/2 fingers and 3 inches long
    3. Heat the oil in a deep pan until a piece of bread dropped into it sizzles and turns golden in about a minute. Deep fry the twigs, being careful not to overcrowd the pan. until they are lightly golden. Drain on paper towel, dust generously with confectioners sugar and serve immediately
