    These cookies are so unique and the flavors of the rosemary, salt and sugar together are a great combination. You can use granulate sugar on the edges of the cookies or candy crystals for cake/cookie decorating or clear rock sugar sprinkles. These options make the cookies sparkle around the edges.

    Ingredients

    • 1 cup (2 sticks) salted butter - softened
    • 3/4 cup granulated sugar
    • 1 large egg (plus 1 egg white, beaten)
    • 1 teaspoon pure vanilla extract
    • 2 1/2 cups sifted all-purpose flour
    • 1 tablespoon finely chopped fresh rosemary
    • 1 1/4 teaspoon coarse salt
    • 1/2 cup sugar

    Directions

    1. Combine flour, rosemary and salt in a bowl, mix with fork. Set aside.
    2. Combine butter and 3/4 cup granulated sugar in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy, about 2 minutes.
    3. Mix in whole egg and vanilla.
    4. Reduce speed to low.
    5. Add flour mixture and mix until combined (don't over mix).
    6. Halve dough. Shape each half into a log.
    7. Roll in parchment and place in freezer for at least an hour.
    8. Preheat oven to 375.
    9. Brush each log with beaten egg white, roll in sugar.
    10. Cut into 1/4" thick.
    11. Bake until edges are golden - approximately 18-20 minutes.
