• Root Beer Cake

    • 2 c. plain flour
    • 2 c. sugar
    • 1 c. root beer
    • 3 x cubes margarine
    • 1/2 c. lowfat milk
    • 1 tsp baking soda
    • 1 tsp vanilla
    • 1/2 tsp salt
    • 2 x Large eggs
    • 1 1/2 c. miniature marshmallows


    1. Mix 2 c. flour with two c. of sugar. In a saucepan, combine 1 c. root beer and two cubes of margarine, bring to a boil and add in to the flour mix. Stir well. Add 1/2 c. lowfat milk, 1 tsp. baking soda, 1 tsp. vanilla, 1/2 tsp. salt and two Large eggs. Blend. If you like, stir in 1 & 1/2 c. of miniature marshmallows to the mix. Bake in a 9x12 pan at 325F for thirty min. For a great topping, use one cube of margarine and 1/3 c. of root beer, bring to a boil and add in one box of confectioner's sugar. Mix and pour over cake while warm.
    2. NOTE: This is a true treat which the whole family will flip over. Try adding walnuts or possibly pecans to the topping for extra zing.
