Roasted Ranchero Sauce (Salsa Ranchera)

- 2 lbs. Roma tomatoes, roasted, chopped
- 2 poblanos, roasted, seeded, chopped
- 2 jalapenos, roasted, seeded, chopped
- 1 tbs. oil
- 4 cloves garlic, sauteed
- 1 large onion, chopped, sauteed
- 1 cup chicken stock
- 2 tbs. chopped cilantro
- 1 tsp. salt
Directions
- Roast veggies.
- Let cool, chop.
- Saute onions in oil, add garlic the last minute.
- Combine all ingredients in a pot and simmer 30 minutes.
- Let cool.
- Place sauce in a blender, pulse 6-8 times (should be slightly chunky).
