Ingredients

  • 2 lb Yellow Fin Potatoes
  • 2 lb Carrots
  • 1 med Carrot
  • 2 Tbsp. Extra Virgin Extra virgin olive oil
  • 3 Tbsp. Red Wine Vinegar
  •     Salt And Pepper To Taste

Directions

  1. These may be roasted ahead of time and served barely hot or possibly at room temp.
  2. Preheat the oven to 400F.
  3. Mix together the potatoes, carrots, oil, vinegar, salt and pepper.
  4. Place in a roasting pan, cover with foil.
  5. Roast for 35 minutes Remove the foil and roast another 10 minutes.
  6. Serves 6
  7. This has a nice taste as a result of the red wine vinegar.
