Roast Pork With Macadamia Stuffing
Ingredients
- 1 kg boned loin of pork
- 1 med onion, finely minced
- 1 Tbsp. minced fresh thyme, (or possibly 1 tsp dry)
- 2 x rashers bacon, minced
- 1 Tbsp. brandy
- 1 tsp mixed spice
- 1 x egg
- 100 gm dry apricots, minced
- 10 x juniper berries, (optional)
- 1 tsp grated lemon rind
- 100 gm macadamia nuts, finely minced
- 1/2 tsp white pepper
- 2 Tbsp. strong chicken stock
- 1 Tbsp. honey mixed with 1 Tbsp reduced salt soya sauce
Directions
- Mix dry ingredients: apricots, thyme, spice, lemon rind, nuts, pepper and breadcrumbs.
- Stir in onion
- Stir in brandy and stock.
- Once well mixed, put into pork joint, either with a piping bag, or possibly spoon.
- Tie up with butcher's string.
- Brush joint with honey/soya mix.
- Roast for 1 1/2 hrs at 180 C brushing with glaze every 20 min or possibly so.
