  • Roast Peppered Rib Eye Of Beef

    Ingredients

    • 1/4 c. coarsely grnd black pepper
    • 2 lb rib eye beef roast, fat removed (2 to 3)
    • 1/2 tsp grnd paprika
    • 1/2 c. soy sauce
    • 1/3 c. red wine vinegar
    • 1/2 Tbsp. tomato paste
    • 1/2 Tbsp. cornstarch
    • 1/4 tsp garlic pwdr

    Directions

    1. Rub the black pepper over the roast and press in with heel of hand. Place the roast in a shallow baking pan. In a jar with a tight-fitting lid, combine the remaining ingredients and shake well. Carefully pour the mix over the roast and marinate overnight in the refrigerator.
    2. Preheat oven to 325 F. Remove the roast from the marinade and bake for 17 to 20 min per lb. for rare. (For the best results, use a meat thermometer.) Let cold slightly. Slice and serve immediately.
    3. YIELD: 4 TO 6 SERVINGS
