Roast Peppered Rib Eye Of Beef
Ingredients
- 1/4 c. coarsely grnd black pepper
- 2 lb rib eye beef roast, fat removed (2 to 3)
- 1/2 tsp grnd paprika
- 1/2 c. soy sauce
- 1/3 c. red wine vinegar
- 1/2 Tbsp. tomato paste
- 1/2 Tbsp. cornstarch
- 1/4 tsp garlic pwdr
Directions
- Rub the black pepper over the roast and press in with heel of hand. Place the roast in a shallow baking pan. In a jar with a tight-fitting lid, combine the remaining ingredients and shake well. Carefully pour the mix over the roast and marinate overnight in the refrigerator.
- Preheat oven to 325 F. Remove the roast from the marinade and bake for 17 to 20 min per lb. for rare. (For the best results, use a meat thermometer.) Let cold slightly. Slice and serve immediately.
