Ingredients
1/4 cup
fresh orange juice (from 1 large or 2 small naval oranges)
2 tbsp
honey
2 tbsp unseasoned
rice vinegar
1 tbsp soy
sauce
1/2 tsp
toasted sesame oil
1-1/2 cups
cooked wild rice
1-1/2 cups
cooked basmati rice
1/2 cup
frozen green peas, thawed
1/3 cup
broken walnut pieces
1/3 cup
dried cranberries
1/4 cup
roasted pumpkins seeds
Preparation
Combine the orange juice, honey, vinegar, soy sauce, and sesame oil in a bowl, stirring until the honey is dissolved.
Combine the wild rice, basmati rice, and remaining ingredients in a medium bowl. Stir in the honey-orange dressing and let stand 30 minutes at room temperature. (May also be covered and refrigerated overnight. Bring to room temperature before serving.)
