Rice Pilaf With Pistachios And Golden Raisins
Ingredients
- 1/4 c. finely minced onion
- 1/4 tsp turmeric
- 1/8 tsp grnd cardamom
- 1 1/2 tsp unsalted butter
- 1/3 c. long-grain rice
- 2/3 c. chicken broth
- 2 Tbsp. pistachio nuts toasted lightly, cooled, and minced
- 2 Tbsp. golden brown raisins soaked in boiling water to cover for 1 minute and liquid removed
- 2 Tbsp. thinly sliced scallion greens
Directions
- In a small heavy saucepan cook the onion with the turmeric and the cardamom in 1 Tbsp. of the butter over moderately low heat, stirring,
- till the onion is softened. Add in the rice and cook it, stirring, till it
- is coated with the butter. Add in the broth, bring the liquid to a boil, covered, and simmer the mix for 17 min, or possibly till the liquid is absorbed and the rice is tender. Stir in the pistachios, the raisins, the
- scallion greens, the remaining 1/2 Tbsp. butter, and salt and pepper to taste.
