  • Rice Pilaf With Pistachios And Golden Raisins

    Ingredients

    • 1/4 c. finely minced onion
    • 1/4 tsp turmeric
    • 1/8 tsp grnd cardamom
    • 1 1/2 tsp unsalted butter
    • 1/3 c. long-grain rice
    • 2/3 c. chicken broth
    • 2 Tbsp. pistachio nuts toasted lightly, cooled, and minced
    • 2 Tbsp. golden brown raisins soaked in boiling water to cover for 1 minute and liquid removed
    • 2 Tbsp. thinly sliced scallion greens

    Directions

    1. In a small heavy saucepan cook the onion with the turmeric and the cardamom in 1 Tbsp. of the butter over moderately low heat, stirring,
    2. till the onion is softened. Add in the rice and cook it, stirring, till it
    3. is coated with the butter. Add in the broth, bring the liquid to a boil, covered, and simmer the mix for 17 min, or possibly till the liquid is absorbed and the rice is tender. Stir in the pistachios, the raisins, the
    4. scallion greens, the remaining 1/2 Tbsp. butter, and salt and pepper to taste.
    5. Serves 2.
