Rice And Broccoli Salad
- 2 c. cooked rice
- 1 c. frzn broccoli florets steamed
- 1/4 c. minced sweet red peppers
- 1 tsp toasted minced walnuts
- 1 1/2 Tbsp. extra virgin olive oil (orig was 2 tbsp)
- 1/4 tsp salt
- balsamic vinegar or possibly lemon to taste
- In a large bowl, mix rice, steamed broccoli, red peppers, and walnuts.
- Sprinkle with extra virgin olive oil, salt and balsamic vinegar or possibly lemon juice. Toss well.
- Serves 4.
