Ingredients

  • 1 frozen double pie crust (thawed)
  • 4 cups cooked red lentils
  • 1 cup mashed potatoes
  • 1/2 cup chopped onion (cooked)
  • Salt & pepper to taste
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ground cloves
  • Oil to cook onions

Directions

  1. Turn oven to 375ยบ F
  2. Rinse and cook lentils according to package directions. (I used 1 cup dry to 3 cups water) **salt after cooking**.
  3. Drain in metal sieve, and mash slightly. Set aside.
  4. Cut, cook, and mash potato. Set aside.
  5. Cook chopped onion in about 1 tbsp. of oil until translucent. Set aside.
  6. Combine lentils, potato, onions and seasonings in a bowl.
  7. Place mixture into the bottom pie shell.
  8. Cut some slits (or pretty cutouts in the top crust).
  9. Wet the edges of the bottom crust with water, place on top crust and press to seal.
  10. Bake in oven for approximately 50-60 minutes until the crust is golden brown.
  11. Remove from oven and cool slightly before slicing.
