    I had to find a use for my leftover ham bone from Easter.

    Ingredients

    • 1 lb dry red beans
    • 2 lbs ham bone
    • 6 cups of water (or enough to cover ham when place in pot)
    • 4 cloves garlic, minced
    • 1 yellow onion, chopped
    • 1 cup celery
    • 1 green bell pepper, chopped
    • 1 Tbs Worcestershire Sauce
    • 2 tsp Cajun Seasoning (Tony Chachere's)
    • 1 tsp salt
    • 1 tsp pepper
    • 3 cups Basmati rice, cooked

    Directions

    1. Place dried beans in a large bowl and cover them with cold water by 2 inches.
    2. Soak for at least 8 hours.
    3. Drain.
    4. Place beans, ham bone, garlic, onion and water in a large pot.
    5. Bring to a boil.
    6. Reduce to a simmer and cover.
    7. Simmer for 1 1/2 hours.
    8. Remove ham from pot.
    9. Let cool slightly and then shred meat away from the bone.
    10. Return meat back to pot.
    11. Add celery, peppers, Worcestershire sauce and seasonings.
    12. Cover and cook for an hour.
    13. Serve over rice.
