Red Beans & Rice

- 1 lb dry red beans
- 2 lbs ham bone
- 6 cups of water (or enough to cover ham when place in pot)
- 4 cloves garlic, minced
- 1 yellow onion, chopped
- 1 cup celery
- 1 green bell pepper, chopped
- 1 Tbs Worcestershire Sauce
- 2 tsp Cajun Seasoning (Tony Chachere's)
- 1 tsp salt
- 1 tsp pepper
- 3 cups Basmati rice, cooked
Directions
- Place dried beans in a large bowl and cover them with cold water by 2 inches.
- Soak for at least 8 hours.
- Drain.
- Place beans, ham bone, garlic, onion and water in a large pot.
- Bring to a boil.
- Reduce to a simmer and cover.
- Simmer for 1 1/2 hours.
- Remove ham from pot.
- Let cool slightly and then shred meat away from the bone.
- Return meat back to pot.
- Add celery, peppers, Worcestershire sauce and seasonings.
- Cover and cook for an hour.
- Serve over rice.
