Red Bean Soup

This is a wonderful tasting and filling soup that doesn't have a lot of calories. We don't wait until it's cold for this wonderful soup.

Ingredients

  • 1-1/2 to 2 lbs ground beef
  • 1 lb sausage cut to bite size
  • 1 large onion, chopped
  • 2-3 tsp minced garlic
  • 2 cans tomato paste or sauce
  • 2- 14 1/2 oz cans stewed tomatoes
  • 1-32 oz bottle V8 juice
  • 1 Tbs Italian seasoning
  • 1- 32 oz box beef broth
  • 2 qts (64 oz) water
  • 2 Tbs worcestershire sauce
  • 2 pkg frozen soup vegetables (or vegs, of choice)
  • 1- 27 oz can Blue Runner cream style red beans
  • 1- 27 oz can Blue Runner cream style spicy red beans
  • 16 oz pasta of choice
  • Cajun seasoning to taste

Directions

  1. Brown ground beef. Pour into colander, wash off fat and drain.
  2. Brown sausage.
  3. Add onion and garlic and cook 5 minutes.
  4. Add tomato paste and stewed tomatoes. Cook 10 minutes stirring frequently.
  5. Add ground beef.
  6. Stir in V8, Italian seasoning, broth, water, worcestershire. Cover and cook 15 minutes.
  7. Stir in the vegetables and beans, cook 10 minutes stirring frequently.
  8. Stir in pasta and Cajun seasoning and cook until pasta is done, stirring occasionally.
