Real Tomato Pie

- 2 packets of yeast
- 1/2 cup warm water (110 degrees )
- 4 cups all purpose flour
- 1 tsp salt
- 1 cup cool water
- 1 can crushed tomatoes
- 4 Tablespoons oregano
- crushed red pepper optional
- 1 1/2 lb thick sliced mozzarella cheese
- Parmesan cheese
- 1 Tablespoon olive oil
Directions
- Combine yeast, 1/2 cup flour, and 1/2 cup warm water in a bowl covered with plastic wrap. Allow to rise for 15 minutes. Stir to deflate. Add 2 cups of remaining flour with salt, 1 cup cool tap water, and oil. Mix thoroughly with a wooden spoon.
- Add yeast mixture. Mix in remaining flour. Knead 15 minutes on a floured surface (10 minutes in a machine) until smooth. Place dough in bowl dusted with flour and cover with plastic wrap. Let rise until doubled size (1 to 2 hours).
- while dough is rising, make your sauce. Combine 1 Can crushed tomatoes, oregano, salt and pepper to taste. I also add a little crushed red pepper. Warm sauce in pan,and cook for about 15 minutes so all the flavors can combine.
- Oil dough with a little bit of olive oil and spread on a large roasting pan, layer sliced mozzarella on the crust , then add the sauce, sprinkle with Parmesan cheese , and top with a little olive oil. Cook at 475 for about 15 minutes.
