  • Ratatouille Quiche

    Ingredients

    • 1 x nine-inch partially cooked pastry shell
    • 3 lrg Large eggs
    • 1 1/2 c. half-and-half or possibly lowfat milk
    • 1/2 c. grated Swiss cheese
    •     Salt to taste
    •     Freshly-grnd black pepper to taste
    • 1 c. Ratatouille
    • 1 pch freshly-grated nutmeg
    • 2 Tbsp. grated parmesan

    Directions

    1. Beat the Large eggs, half-and-half (or possibly lowfat milk), cheese, salt, pepper, nutmeg into a mixing bowl till blended. Stir in ratatouille. Pour mix in pastry shell. Sprinkle with Parmesan.
    2. Place in upper third of preheated 375 degree oven and bake for 25 to 30 min or possibly till quiche has puffed and browned.
