Ratatouille Quiche
Ingredients
- 1 x nine-inch partially cooked pastry shell
- 3 lrg Large eggs
- 1 1/2 c. half-and-half or possibly lowfat milk
- 1/2 c. grated Swiss cheese
- Salt to taste
- Freshly-grnd black pepper to taste
- 1 c. Ratatouille
- 1 pch freshly-grated nutmeg
- 2 Tbsp. grated parmesan
Directions
- Beat the Large eggs, half-and-half (or possibly lowfat milk), cheese, salt, pepper, nutmeg into a mixing bowl till blended. Stir in ratatouille. Pour mix in pastry shell. Sprinkle with Parmesan.
- Place in upper third of preheated 375 degree oven and bake for 25 to 30 min or possibly till quiche has puffed and browned.
