Rainforest Cafe's Crab Cakes
Ingredients
- 1 Tbsp. Worcestershire sauce
- Juice from 1/2 lemon
- 3 x egg yolks
- 1/2 tsp Coleman's dry mustard
- 1/2 tsp black pepper
- 1 pch red pepper flakes
- 1 pch Old Bay seasoning
- 1 pch salt
- 3 ounce mayonnaise
- 1 1/2 c. fresh bread crumbs
- 1/4 c. fresh parsley finely minced
- 1 lb lump crab meat
- Extra virgin olive oil for sauteing
Directions
- Combine the Worcestershire sauce, lemon juice, egg yolks, mustard, peppers, Old Bay seasoning, salt and mayonnaise in a mixing bowl and mix well. Add in the bread crumbs and parsley and mix well.
- Gently sift through crab meat to remove any shells. Add in to the mix and mix in gently. Don't break up the crab meat. Make into patties and saute/fry in extra virgin olive oil for 2 to 3 min on each side.
