  • Rainforest Cafe's Crab Cakes

    Ingredients

    • 1 Tbsp. Worcestershire sauce
    •     Juice from 1/2 lemon
    • 3 x egg yolks
    • 1/2 tsp Coleman's dry mustard
    • 1/2 tsp black pepper
    • 1 pch red pepper flakes
    • 1 pch Old Bay seasoning
    • 1 pch salt
    • 3 ounce mayonnaise
    • 1 1/2 c. fresh bread crumbs
    • 1/4 c. fresh parsley finely minced
    • 1 lb lump crab meat
    •     Extra virgin olive oil for sauteing

    Directions

    1. Combine the Worcestershire sauce, lemon juice, egg yolks, mustard, peppers, Old Bay seasoning, salt and mayonnaise in a mixing bowl and mix well. Add in the bread crumbs and parsley and mix well.
    2. Gently sift through crab meat to remove any shells. Add in to the mix and mix in gently. Don't break up the crab meat. Make into patties and saute/fry in extra virgin olive oil for 2 to 3 min on each side.
