Quick & Easy Fresh Cranberry Relish

An uncooked cranberry relish makes the fruit flavors pop. This version adds pecans to a combination of cranberries and orange. Carbohydrate and calorie count can be reduced significantly by substituting Splenda or other non-nutritive sweetener for the sugar.

Ingredients

  • 12-ounce bag of cranberries
  • 1 orange unpeeled
  • 1 cup pecan pieces
  • 1 cup granulated sugar

Directions

  1. Rinse cranberries in cold water and drain well (no need to thaw if frozen). Wash orange and dry. Remove any seeds from orange and cut it into eighths with skin intact. Place orange pieces, cranberries, pecans and sugar in food processor. Process until orange and rind are grated into small even pieces.
  2. Allow to stand about 20 minutes, stirring occasionally til sugar is thoroughly dissolved before serving.
  3. Yield: 3 cups relish or 24 servings (serving = 2 tablespoons)
