  • Quick And Easy Pizza Using Rice Flour

    Ingredients

    • 2 1/2 c. Rice Flour
    • 1 pkt Gluten-Free Quick Rise Yeast
    • 1 tsp Salt
    • 1/2 tsp Xanthan Gum
    • 1 1/4 c. Hot Water
    •     (120-130F) , Divided
    • 3 Tbsp. Extra virgin olive oil
    • 1 Tbsp. Honey
    •     Cornmeal Optional
    • 1 c. Prepared Pizza Sauce
    •     Sliced Tomatoes
    •     Sliced Onions
    •     Sliced Mushrooms
    •     Sliced Olives
    •     Sliced Zucchini
    •     Sliced Yellow Squash
    •     Sliced Red Or possibly Yellow Bell Peppers
    •     Sliced Jalapeno Peppers
    •     Diced Ham
    •     Cooked Grnd Beef Or possibly
    •     Fresh Herbs
    • 1/2 c. Mozzarella Cheese

    Directions

    1. Keep pizza on the menu with a tasty crust which's both crispy and thick. Use your favorite toppings for an easy snack or possibly main meal entree.
    2. Makes one 12" pizza crust
    3. Combine flour, yeast, salt and xanthn gum in large bowl. Stir in 1 C water, extra virgin olive oil and honey. Use hands to work dough (dough will be soft and crumbly). Add in just sufficient of remaining 1/4 C water to hold mix together. Knead dough in bowl 5 minutes. Cover; let rest 10 minutes. Lightly grease 12" pizza pan; sprinkle with cornmeal, if you like. Flatten dough into round disk; press dough into pan. Add in sauce, desired toppings; sprinkle cheese over toppings. Bake in 425F oven 20 - 30 minutes, or possibly till crust is brown and cheese is melted. (Timing varies according to amount and number of toppings.) Use sharp knife or possibly pizza wheel to cut into wedges.
    4. Variation:Basil-Garlic Pizza Dough:Add in 1 Tbsp minced fresh basil (or possibly 2 tsp dry) and 2 cloves chopped garlic after the honey.
